Maturation The varieties of grapes are fermented separately. After a few months that the fermentation is completed the varieties are assembled together.
To form the blend of Casanova, 30% of the wine is put to soak for a few months in French oak barrels until it is ready to be blended with the remaining 70% which has continued its maturation in steel. Once the two are blended, they stay together for several more months before bottling.
